You can just go on typing and working in whatever program you're in until you feel like dismissing or snoozing them. However, if they really bother you (most people want reminders when they're NOT in Entourage and have forgotten about upcoming activities: that's why this feature was added in Office X), just go to the Entourage main menu before quitting it and select "Turn Off Office Notifications". Then when you open Entourage, turn them back on. Unfortunately, Office Notifications is not yet scriptable, either as an application or as this Entourage menu item. So it can't be done automatically for you. (I'll experiment with just opening the Office Notifications application when opening Entourage, from an At Startup schedule. I'll let you know if that works.
