Entourage X lets you choose any one of about 40 formats (corresponding to different styles as used in most countries) as your "normal" format (for your own country), so that if you enter no formatting at all (no spaces, dashes, parentheses - just the numbers) it will be set automatically to this format, but when you add formatting (for other countries, say) it honors what you enter. OR - you can turn this off completely. (These options are in the Address Book preferences.)
