Entourage, by default, won't even ask you to send return receipts if any
message requests them.  It simply isn't supported, unlike Outlook for
Windows which would prompt you.

You could create a rule to do this.  Go to Tools -> Rules, then click the
Mail tab, then click New on the toolbar.

* Execute actions if all criteria are met
IF Specific Header "Disposition-Notification-To" Exists
IF From Is in Address Book
THEN Display Dialog
AND/OR
THEN Reply (reply text would be the receipt sent automatically)

Perhaps this is scriptable so that if a message came in with this header, it
would prompt you as to whether you wanted to send a receipt.  One could run
a rule with the same criteria with an action of "Run AppleScript" instead.
I'm not sure about this though.
