Entourage doesn't export tasks. My shareware scripts Export-Import Entourage
X will export them to a text file (and thence into Excel if you wish). The
number of beers and chocolates you've offered me "if I ever come to
Brussels" would more than pay for the scripts. ;-) Not that the tasks are
doing much harm in Entourage. You could just view "Due Today" or Due This
Week" (in the View menu) and not look at the older tasks unless you really
want to.

Tasks _should_ be for things like project tracking. But Entourage's tasks
don't offer many fields: they're far too limited. I suppose you've seen
Outlook's? Percentage of work done, rate, hours, billing info, etc. etc.
It's a shame that Mac business users should have to buy another app, when
Entourage ought to be be able to do it.

PLEASE always state which version of Entourage you are using - 2001 or X.
It's often impossible to answer your questions otherwise.
