You seem to be running into the problem described in this "current problem" from the Entourage Help website:
Warning: Due to a Mac OS bug, dragging anything more than about 200 items to the Desktop (for instance, messages) is likely to result in problems (this has already been reported to Apple). In many cases, not all the items make it to the desktop; in some cases, Entourage may hang or crash. If you must drag many messages to the desktop, use one of two workarounds: 1) Create a temporary folder in Entourage. Drag all the messages into that folder.
