Just enter in the number without any separators.  It'll then be converted to
the correct format.  I've always done it that way, and I did not realize it
could be done the other way in 2001.  Go to Entourage -> General
Preferences, click the "Address Book" tab, check the option to "Format Phone
Numbers", and click OK.  From there, any numbers you type without
separators, like 12345678980, will automatically be formatted to (123)
456-7890.
