I don't have Exchange nor am I using Entourage's new Exchange functionality, but I have used tcpflow to troubleshoot connection problems. Once you have it installed, quit Entourage (and all other Internet apps), and run the following in Terminal: sudo /usr/local/bin/tcpflow Leave that Terminal window open, launch Entourage and check your Exchange account. Switch back to the Terminal window and hit Control-C to quit the tcpflow process. It'll have produced two files in your home folder with the conversation Entourage and your server had.
