If you enter an email address on the message then you can just click and edit it. If the address entry is linked to a contact, then you must click on the contact in the recipient list, press delete and enter a new one. Entourage identifies the contact as soon as you type it. If I remember, Outlook in Windows (and Outlook 2001 for Mac) does not identify the contact from the address book until you send the message, or ask it to check names.
