If you enter an email address on the message then you can just click and
edit it.

If the address entry is linked to a contact, then you must click on the
contact in the recipient list, press delete and enter a new one. Entourage
identifies the contact as soon as you type it. If I remember, Outlook in
Windows (and Outlook 2001 for Mac) does not identify the contact from the
address book until you send the message, or ask it to check names. Each
method has it's pros and cons.
