Actually there is a really nice script that you can use for this purpose. I
have it in my System Folder:Startup Items, and that does exactly what you're
talking about:

Backs up the Main Identity folder and continuously deletes the oldest of
three such backups.

It's called "Backup Entourage Data 1.1", I can't remember exactly where I
got it, but I'm sure some of the wizards on this list can help you with
that; Paul B or Allan W.
