The loss of Keyboard shortcuts, a loss which is fixed by quitting and relaunching Entourage, was reported frequently during beta testing. Some changes were made that reduced the frequency of the problem. Unfortunately, no one was ever able to provide a reproducible sequence of actions that would cause the problem, and, to my knowledge, it was never 100% fixed by the MacBU team. If you lose your shortcuts, so that the menu simply flashes but nothing happens, your best best is to quit and relaunch.
