Actually, Mail Courier syncs to 5 folders (Inbox, Sent Items, Drafts, Deleted Items, and Filed), but they're all local folders "On My Computer", true. So make an IMAP rule, in Tools/Rules/Mail (IMAP) that copies all messages to the local Inbox. If you're also receiving mail on your handheld and syncing it to Entourage, the also make a POP rule that copies all messages (meaning new messages) to your IMAP INBOX.
