Click the Options tab, and in the Server Options in the lower half, if "Leave a copy..." is checked to leave messages on the server, make sure that the box below is also checked, "Delete messages after n days", and set a reasonable number of days; I use 3 or 4, depending on how much mail an account receives. Within Entourage, set up a Schedule to erase items from your Deleted Items folder once they are aged a certain number of days.
