Well, Exchange can (and probably should) be set up so you don't see winmail.dat files. It's important for users of other apps besides Entourage.
I forgot what we did at our site to fix this but I believe it was some policy set on the Exchange 2000 server itself. I think it was related to having all recipients receive HTML or plain text mail rather than RTF.
