I tried tcpflow. I was able to see the traffic when Entourage connected with
my POP accounts 
just fine. Unfortunately, when it tried to send from my IMAP account (via
smtp), the messages 
are scrambled. I suspect this is because the connection is using SSL.

Once again, I double-checked the settings with the old (EvX) configuration,
and they are the 
appear the same in Entourage 2004:

Receiving mail
   Account ID:   my e-mail account
   E-mail address:  my address
   IMAP server:  imap.xxx.net
   Password:  my password
   Save password in my Mac OS keychain is "checked"

Advanced Receiving Options:
   This IMAP service requires a secure connection (SSL) is "checked"
   Override default IMAP port: 993 is NOT checked
   Allways use secure pasword is NOT checked

Sending mail
   SMTP server: smtp.xxx.net

Advanced Sending Options:
   SMTP service requires secure connection (SSL) is "checked"
   Override default SMTP port: xxx is "checked"
   SMTP server requires authentication is "checked"
   Use same settings as receiving mail server is "checked"

I'm getting desparate! If anyone can suggest different things to try, I'd be
most appreciative.

Note that the ISP will not turn of SSL, so trying it on an unsecure connection
isn't going to 
happen.
