I hide the folders pane regularly on my 15" iMac; I like the extra space for messages at right, and wider column to show long subjects in the message list. You can use the Keyboard System Pref Panel to set up a keyboard shortcut to toggle "Folders List" on and off, which makes it very convenient. If you also select "Display Small Navigation Buttons" in General preferences in Entourage, you get even more horizontal space.
