The local copy of the attachment may be lost.  However, if it is an IMAP
account, the attachment remains with the original message on the server.  If
you can log onto the mail server directly (for example, if it has a web
interface) and move the message back to the Inbox on the server, the message
and its attachment(s) should be downloaded again to the Entourage Inbox.

I suspect a similar strategy could be used to recover attachments of
messages from a POP account if the "Leave a copy of each message on the
server" option is selected for the account.  Although, I don't have direct
experience to confirm it, the comment by "neier" on this macosxhints page
suggests a similar strategy can be used:
