They already have a country category, it's just listed second to the generic Holiday category. You can still filter on the country category with the QuickFilter, Advanced Find and Custom Views. To make them "stand out" with the country holiday color, you just need to make that category primary as I described in my last post.
Which I only noticed after I sent the last post... Having multiple categories assigned is actually a quite useful feature. I only wish my Zire71 supported multiple categories per item.
