It sounds to me like the easiest method might be to export the separate Inbox & Sent Items folders for past years as MBOX files by dragging them to the Desktop (you need to export subfolders separately). Then, delete the folders from Entourage. You can move them to any safe location to back them up. You can then drag these MBOX files back into Entourage (or any other MBOX-aware mail application) and access all of the messages and attachments whenever you need to.
