In entourage 2004 there is an archive command that will copy the mail out of entourage all together and (optionally) delete the mail from entourage. If this doesn't suit, you could manually copy the mail from the IMAP folders to subfolders of the 'on my computer' icon in the folder listing. Then, delete the mail from the IMAP folders.
