You can't change the default map access in Entourage. You can create
AppleScripts which you can select from the AppleScript menu, which will take
you to a different map web site. This has been done for the Australian
Whereis web site. The scripts can be found at:

It's not as good as having it built in but at least it gives you an option.

You could tailor it for the site you want to use.

It's a shame how Microsoft hard-coded the map site to use. It doesn't cover
every country. What would have been good is some way to plug-in different
sites, especially for different countries.

Although the Map Of feature of Mac OS X's Address Book is not able to
provide maps for many countries, the plug-in architecture allows the pop-up
menu for an address, where Map Of resides, to contain extra options. They
can even be written in AppleScript, like the ones for the Australian Whereis
web site, which can also be found via the above link.
