This can only be accomplished if both the sender and recipient are on the
same mail server. And the client/server software would have to implement
that feature. Entourage does not for POP & IMAP accounts. Maybe it could be
done for Exchange accounts, but I don't see any signs of it currently being
implemented.

The only way I can think of to implement this would be through the use of
web bugs. But a number of email client software these days (including
Entourage) disable to loading of external images to thwart the use of web
bugs, so it would not be a feasible option.
