I don't think that you can suppress the icon change, but have you looked at enabling notification? Go to Preferences -> Notification. Check the 'Display an alert on my desktop' and select whether you want the Subject only or a preview of the message body as well. This should help you determine if new mail is worth the interruption. For even more flexibility, you can also look at Growl: <http://growl.info/> which works great with Entourage (and a bunch of other OS X apps).
