Go to calendar/contacts view, click the "show views" button (the one that looks sort of like a fast-forward), select the calendar/address book that you want to be the "standard", then "Hide views" again. Works great. Incidentally, I didn't know you could control-click on the buttons. I had the exact opposite problem to you --- how to quickly switch calendars/address books without going through the whole process of opening the views panel then closing it again.
