Groups that you create in Entourage (through the current 11.2.1 version, at
least) do not sync with an Exchange server at the moment; they remain local
to Entourage. Groups/mailing lists that you create in your Exchange mailbox
with another client, such as Outlook/Win, do not sync to Entourage today.

You can, however, access any mail-enabled groups or distribution lists that
are available from the Exchange GAL (these are lists that an Exchange admin
is probably more likely to set up for you) -- I use that capability all the
time, especially for meeting invitations.

The Entourage team has obviously been adding a lot of Exchange features in
the last few releases. So, perhaps these other limitations will eventually
be remedied. I know Entourage has become a useful Exchange client for my
university thanks to all of these updates, but I know that group/mailing
list support is something we'd like to see, too.
