Go to Format menu/Character Set/Traditional Chinese (Big5). If that's what
it actually is, it will show up correctly. If it doesn't, try UTF-8.

If the sender's charset headers actually included the correct character set
declaration, it would show up correctly without your having to do anything.

When the non-standard characters appear in a new message, Entourage will
switch automatically to the correct character set, probably UTF-8.
