Since re-installing 10.4.6 (I think) ...
The Spotlight Preference option has disappeared.
I double checked, and I am running Entourage 11.2.3.
Any suggestions?

Check for the existence of this file:
/Library/Spotlight/Microsoft Entourage.mdimporter/
If it isn’t there you will need to re-install the spotlight updater.
