I'd look at:

1) Now Software <http://www.nowsoft.com/>

2) Kerio Mail Server <http://www.kerio.com/>

Or else find an online web-based service.

A Mac Mini is fine for a Kerio server, but you will need a static IP and
domain name. It has been a while since I've done Now Up-To-Date and
Calendar, but these may work P2P for a few people.

Kerio is not cheap, but it works great and costs far less than Exchange
Server. I'm running 2 licenses, with maybe 50 users recently moved to one
using group features very successfully. Besides the server component, you
will have to install a "plug-in" (Kerio Outlook Connector) on each Windows
machine, then reconfigure e-mail accounts, and perhaps migrate data.
