I use a little utility called MisFox. Most of our people don't use Apple Mail and it is quicker than canceling out of the welcome/configuration screen.
It will let you set the default browser, mail client, news reader and FTP client as well as modifying File Mappings and Protocol Helpers. 99% of the time I just use it for mail and browser apps.
