The closest analogue to Entourage's categories are groups in Address Book.
They are not quite the same, you're right.

Entourage categories are like tags or keywords attached to an object -- a
contact card in this case. They travel with it. They are attributes of the
object.

Address Book groups are more like a container -- similar to a folder (albeit
the non-smart kind of folder, but AB has smart groups, too, so it can be as
hip as the Finder).

I'm not sure, but the third-party Sync Services plugin, e2Sync, may map
categories in Entourage to AB groups. You may want to check it out. I have
it but haven't used it that way. (I believe it can do so for iCal calendars
vs. Entourage categories, where the issue is much the same,
container-vs.-attribute.)

As for custom fields in Entourage, you probably don't want to store Social
Security numbers in them -- especially for anyone other than yourself. (If
you store SSNs in you address book, I'd rather not be one of your contacts,
I'm sorry to say.) If you need to keep them, I'd create a Secure Note in a
keychain (perhaps your default login keychain, but you can have as many as
you want, each with their own passphrase) in Keychain Access. At least
there, that sensitive data will be encrypted with 168-bit 3DES.

I would also put other important numbers that you want to keep private in a
keychain rather than a cleartext contact card or note in Entourage.

Also, notes don't sync to/from the iPhone right now. Presumably, this could
be a feature added in the future.
