Which fonts did you remove? Helvetica and HelveticaNeue are two fonts that Safari makes liberal use of. HTML mail really likes Times New Roman, Helvetica, Arial. Entourage likes both Verdana and Trebuchet, though you can set your font display preferences to be whatever you want.
