There is no reason I can think of why mail sent from Apple Mail should have
any problem being received by Entourage. I get scores of such messages all
the time, and I've never heard of anyone else having a similar problem.

The only thing that comes to mind is: Have your Entourage users check their
Junk Mail folder. Try resetting the Junk mail tool to a more tolerant
setting. Sometimes, Entourage will flag mail as Junk that isn't junk. If you
find one such message, use the link for "This is not junk mail" that will
appear in the header of the message to either enter the sender's address in
the Address Book or add their domain to your "white list" so that no mail
from that domain will ever be flagged as junk.
