I know that's the case for Outlook on a PC, that messages on the Exchange 
server aren't edit-able, and I believe it is the case for Entourage as well.

Nope.  Near as I can tell, that only works once the message has been moved to 
my computer.  For example, my Inbox is on the Exchange server.  If I open an 
inbox message into its own window, the edit option is grayed out on both the 
toolbar and the menus.  If I then move that message to a folder on my computer, 
and open it up, the edit function is available.

I just checked, and deleted items, also on the exchange server, are also not 
editable, unless I move it to a folder on my computer.  So I am pretty sure it 
is the message location (on computer vs on exchange server) that modulates this 
behavior.

Can anyone confirm - either able to edit on exchange or not?  Thanks.
