I am not sure what is causing this behavior (perhaps multiple monitors) but I can assure you that this does not happen on my computer with Entourage 2004. It's not an OS X issue, it's a bug in Entourage 2008.
I have three monitors and I always have three Entourage windows open, one on each monitor. One window is my inbox, one is my calendar, and the third is a list of all incoming mail that was received today. What I discovered today was that only my inbox window (the window on my main monitor) is moving to the front and hiding the current message that I am writing. The other two windows always stay in the background. I know that this seems like a minor problem but it's not. When I am very busy and I get interrupted near the end of writing an email I will forget that I did not send it. If you switch to another program by clicking (one of) its > window(s) then just that window comes forward, and to switch back you'll > have to click the window you want.
