There are AppleScripts that can delete an attachment, but I don't think they
work on server-based messages. This is one reason I always send large
attachments 'under separate cover' because I don't like to keep them for
very long.

You could theoretically drag a message to your desktop, edit it in a text
editor to delete the attachment, and drag it back. But this is more work
than you're going to want to put into this if it's a routine operation.
