Bob, Bosnia is the only place you mentioned where you should do only guided hikes due to land mines. That is true also in some areas of Croatia. Otherwise Balkans, Czech and Slovakia are about as safe as western Europe. Last year I read a study which said there are more crimes per capita in many western countries then in Balkans. Bulgaria may be a bit less safe, but I don't know if there are substantial old growth forests left. Language can be a small problem, english is not spoken widely in smaller localities. If you take the case seriously, you study some basics of the local language (say, 3 months); everything is then easier.
