R> I found the following description of the mirror lock-up function for the 3:

R> engage the self-timer
R> open the little side-door
R> press the little CF button
R> select the correct custom function
R> press the little CF button again to engage mirror lock-up

R> My question is: If you perform the above steps, and then take, say, 36
R> exposures, do you have to do all those steps for each exposure? Or does the
R> above 'set' the EOS 3 to mirror lock-up, so that all successive shots are
R> with the lock-up function, until you turn it off?

Hello Ron,

This would be tedious. You only need to perform the action once to
engage the mirror lock-up and once to deactivate.
