I use the Sigma HSM 70-200 and the Canon 85/1.8. The Canon 70-200- is
equivalent to the sigma for this question.
The 85 and 70-200 zoom are both excellent
portrait lenses. The 85 is a little nicer in low light, and a lot smaller
and lighter (and less imposing to subjects not used to big lenses).
The 70-200/2.8 is much more versatile and useful, and has a longer
working distance. Both can get about the same blur in the background
when you use the 70-200 at the long end at 2.8. If you are into the
various softening filters for portraits, the 58mm 85/1.8 is much
cheaper than the 77mm 70-200/2.8. Both are plenty sharp, among the sharpest
prime and zoom lenses for any system. The 70-200 takes a good 1.4 or
2x which makes it even more versatile. If only it had IS...
As always, it just depends on you which is better for you...
