You don't say what kind of slide film you were using.
If it was Pro film, and not kept refrigerated, I
suppose the color shift could be because it's
outdated. Or if it was exposed to high heat during
it's life. But otherwise, I wouldn't expect much
color shift. Manufacturers build quite a bit of
leeway into their film expiration dates. Could
possibly be from faulty processing or from the
surroundings.
As far as overexposure, it sound like the flash system
just put out too much light. While the Canon system
handles fill flash quite well, it's certainly not
perfect. I think the Elan 7 has a custom function
that reduces flash output, for fill flash, if the
overall EV of the scene is above a certain level. If
the overall lighting level was just below that, or if
you've changed that CF, that could also explain it.
