It doesn't, and it can't. Since EOS lenses have no
aperture ring, the diaphragm is controlled by
electrical signals from the camera body, which can't
control the diaphragm on the Leica/Nikon/Pentax lens
you have mounted. You can focus at full aperture, but
when you are ready to shoot you need to manually
rotate the aperture ring until you reach your desired
shooting aperture (which will NOT be indicated in the
finder, you get the 0.0 since the lens is incapable of
reporting the aperture). This is to say you do not
have autodiaphragm operation, and the viewfinder will
be dark at smaller apertures.
However, the EOS designers cleverly set up the
firmware in the EOS cameras to operate in an
autoexposure mode even if the lens isn't EOS
compatible... if the camera doesn't recognize the
camera as an EOS lens, it falls back into a "stop
down" metering mode... as long as you are in the Av or
P modes, the camera will automatically set the proper
shutter speed. This has been my experience mounting
old T-mount preset lenses on EOS with the proper
T-adapters.

*FWIW, I met Steve at the Bill Bagnall Photo Swap Meet
in Buena Park, Ca. yesterday, while I was looking at
some old Canon 7s and V/VT rangefinders. It happened
to be at Steve's swap table. He had a bunch of strange
SLR adapters and a ton of new Cosina-Voigtlander gear
on the table, which got me to wondering (look at his
site, which is huge, and you'll understand...)
So I asked him if he was indeed the Gandy of the 'Net.
He raised his hand and said "Guilty!". Suffice it to
say he's a real neat guy who is very knowledgable
about all kinds of things. :-)
