I have a modified EOS 1000FN, similar to your EOS REBEL S.

It seems you managed to solve this one on your own. As you have
discovered, once the camera back has been opened without a REWIND,
the camera enters an EMERGENCY REWIND MODE.  Any subsequent roll
of film, old or new, will be rewound as soon as the back is closed.

The suggested method to reset the camera is to remove any film,
close the camera back, turn the camera ON (e.g. to P) and 
PUSH THE SHUTTER RELEASE FULLY.  The camera should then behave.
