Well, I don't know the 1N RS very well. But AFAIK, the 6ms lag time is for
RT mode only, which is a special mode of the camera which limits it's other
possibilities at the same time. Seeing through the viewfinder while shooting 
would certainly be useful for paning.

As for the PB E2. This one will work with an EOS 1N (and maybe 1), but you 
obviously can't use some of the controls it offers, just the shutter release
and AE lock button (which are the controls offered by the dedicated PB E1)
Otherwise it works fine. The 1N RS comes with a built in power booster, so 
you can't use the PB-E2 with it, one booster should be enough. ;-)
There is a NiCd pack available for the EOS 1N series AFAIK. Those are quite
expensive items, though. A cheaper alternative could be to buy some 
additional battery holders for the built in boosters, buy some AA NiMH or 
NiCD cells and use those as battery packs. There are excellent chargers for
individual AA cells out there.

Yes, it will try to focus on whatever is behind the active AF sensor. This
is true for all EOSes AFAIK. One workaround is, to move AF to the AE lock 
button and try to anticipate those situations (keep the left eye open!). 
If you're fast enough, you can disable AF during the time your subject 
is obstructed by someone else in front. This will certainly need some 
practice.
