I've gone to 2:1 with the 180 f/3.5, and to about m=0.6 with the TS-E 90
f/2.8, using the 2x extender in both cases. Obviously, I have plenty of
working distance in either case that you wouldn't have with a shorter lens.
I just tried it with an EF 35 mm f/2 (non-USM) and stacked 12 mm and 25 mm
extension tubes; though not quite as simple as with the 180 at 2:1, I still
didn't have much trouble. However, the magnification was only slightly
greater than 1:1, and the 35 f/2 is a bit easier to focus manually than
many of the short USM lenses, so I'm not sure that I proved much.
It doesn't sound as if any of your lens combinations have lens collars, so
you'll need to flip the tripod head for verticals. The bane of many
focusing rails is the tendency to rotate on the tripod head in this
orientation, so I'd recommend getting something that's top and bottom
compatible with the Arca-Swiss system. The rotation is a bigger deal than
the hassle of removing the plates.

Nor would I. A while back, RRS made a somewhat simpler B15 slider that
worked for either a lens or body mount. It might be worth trying if you
could find a used one. It's actually the one that I have rather than the
B31 that I mentioned ...
