I've not found the metering to be that wild.

Are you using Auto Selection for AF?

IME the 7 point AF of the 10D is very inconsistent in choice, even with a
static subject (I tried this in the studio on the studio stand with a
still-life, it doesn't get more static) the camera would not use the same AF
points repeatedly.

With evaluative metering biasing the exposure towards the AF point, could
this be the reason?
