It seems you've answered your own question:

"Some of the shots I took were over exposed in some very light colour areas, and I was not able to recover these areas entirely, at the same time it seems to be "easier" to get more details out of underexposed area in Photoshop than overexposed area."

I find the error is better to underexpose. Once the highlights are blown there is no recovering them. Detail in the shadow area is different as it looks like one shade of dark but in reality you can curve out plenty of more detail from those shadows. Detail is in the shadows while the blown highlights will never be there.
