Just thinking out loud here:

Where you using a remote release (as you should for long time
exposures ;-)?  and when you changed the subject, was there any light
shining behind you?  Light falling into the viewfinder will affect the
TTL readings and that might explain the situation: while composing,
your eye on the viewfinder blocks any light and the reading is 30''
f/2.8. Then you back up, light comes into the viewfinder, affecting
your exposure reading and you press the remote release, resulting on a
underexposed image.

When working with a remote release I use mainly (M)anual mode to avoid
this problem.
