I suspect that you have too much air leaking into the bottom portion of your cowling. I know you have looked at the baffling around the cylinders and behind the engine.

It doesn't take much...on N99387 the AI was concerned about the baffles rubbing on
the rocker covers, and so relieved them just a bit. By my estimates, that was worth
10 degrees extra heat in the oil, thus certainly more on the top-end. Mind you, before
I was lucky to hit 180F on a hot day, so it's actually just right now, running at 180F
with ambient air temp anywhere from 70 to 95F.

But the point is... it doesn't take much to make a big change when that air is moving
in excess of 100MPH.
