Roger.
Do you have the Ercoupe Memoranda and service Bulletins at hand?
In Memorandum #43 you can see the different fuel systems and also some drawings on how the lines should be layed out . I can not see many S turns there, if at all.
From  the perspective of flow in pipes, every corner takes away flow energy. However, a slight bend is much easier to overcome than a sharp 90 degree angle.

Subject: [COUPERS-TECH] Header tank overflow

----[Please read http://ercoupers.com/disclaimer.htm before following any advice in this forum.]----

As I continue to research the issue of my nose tank occasionally venting fuel while at idle, I followed the routing of the overflow line under the panel and down the left side just forward of the seat.  I found that the line has been formed into a fairly large "S" prior to ending at the fitting on the left tank.  This "S" creates a trap similar to a sink drain.  Why is this trap bent into the overflow line?  What purpose does it serve?  I would appear that it creates considerable resistance in the fuel trying to enter the overflow line and return to the wing tank.  Also, I can imagine that over the years it may have become partially clogged with sediment and whatever.  Tomorrow I will remove the line and clean it out completely. Hopefully it will then permit a better return of the overflow fuel.    However, any thoughts on this or experiences with it are appreciated.  Thanks...Roger
