Chris.
The control column is coming pretty close to the instrument panel. You are
facing space problems here too.
Plus I like the extra leg room that I have when flying alone. When you put a
radio stack right in the middle, it'll be always very tight and crampy
there.
Why don't you think about your flying needs first and decide then. If you
don't fly IFR, a basic VFR instrumentation is enough to have. Maybe a gyro
and a GPS - what else do you need? Of course a good radio and transponder
should be part of it.
There are some good models out there that fit right into your panel and are
even short enough too.
See this http://www.airplanegear.com/microair.htm
http://www.mcp.com.au/xcom760/
http://www.chiefaircraft.com/cgi-bin/air/hazel.cgi?action=serve&item=/Avionics/MfgAI/Becker.html

I know, the Microair is not TSO'd , but I heard of some satisfied Ercoupers
that are using them.
The Becker radios might be just a tiny bit too long for the use in the
Ercoupe, but that needs to be verified individually.

Main idea is to have the instrumentation ready that supports your style of
flying. Not to have all instruments possible. One does not need the
information overload that comes in the way when situations need clear and
fast decisions.

Also modern instruments are a very good substitutes to old style mechanical
gyros for example.
If you own a handheld GPS that is able to display a compass rose, your
mechanical gyro becomes useless ballast immediately.
The GPS shows you exactly your heading regardless of wind components and
instrument errors. It is just superior to a DG - it is like an HSI. And all
with so little weight.

If you think it trough, you will be able to fit all instruments and radios
into the panel and you and your passengers will enjoy the leg room.
