Hey Dan: The rudder pedals can be removed with about two hours of work. You  
would need to replace the brake pedal (if you were going to use a foot brake)  
and most likely the very front floor board that the rudder peddles are 
attached  (however this can be reused if you remove the pedals from the board. 
Removal  also requires you reinstall the bolt in the mixing unit behind the 
seat 
that  coordinates the aileron/rudder movements.
