Bill said it right.  On a level floor, having the windowsills level is the
desired goal.  Just to check since the floor might have a subtle slope, get
it level and then turn the plane 180° to be sure it's still level.

Measuring tail height (the highest point on the stabilizer/rudder) is just a
field expedient to see if you're close.  By the tail height measurement
it'll be 75" high on a single fork nose gear plane and about 76.5" high on a
double fork nose gear plane.
